Shun professional knives are made of 32-layer stainless steel damask with a central core of VG-10 steel. This very hard steel, particularly resistant to corrosion, has a Rockwell hardness of 61 +/- 1. The convex edge of the blade as well as the manual sharpening of each Shun knife guarantee a remarkable cut. The beauty of the handle is enhanced by a mitre at the end.
